I love pasta, and I think it gets a lot of unfair hate in the world of low-carb dieting. Pasta provides the carbohydrates and fiber you need to live a healthy, active lifestyle, and when used in dishes like this one, it provides a healthy and substantial base.
The other main ingredient of this dish is my absolute favorite food: avocado! Avocados are rich in healthy fats, protein, and fiber, and are absolutely delicious! Avocados are in their peak season during the summertime, which makes this a great summer dish.
This pasta dish is full to the brim with healthy fats, amino acids, and fiber. If you’re not vegan, you can add a lean protein to this pasta to make it even healthier. No matter when you make it, it’s sure to satisfy!

Ingredients:
- 8 oz spaghetti
- 2 very ripe avocados
- 2 cloves of garlic, finely minced
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Cayenne pepper
Instructions:
1. Cook spaghetti according to the package
2. In a bowl, mash avocados, garlic, extra-virgin olive oil, lemon juice, a pinch of cayenne pepper, sea salt & freshly cracked black pepper
3. Mix together until smooth & creamy
4. Plate & top with avocado sauce
